Beetroot & Goat's Cheese Risotto - Main

Our vibrant beetroot risotto is a real treat for your guests. To get the most out of the flavour of the beetroot, you will roast and then caramelise the beetroot before creating a deliciously pink stock for the base of your risotto. This risotto can be cooked ahead of time and is the perfect option for any host who doesn’t want to spend lots of time in the kitchen cooking and washing up when the guests arrive. You will serve this beautiful dish with a grilled slice of goat's cheese to give the risotto another layer of indulgence and a creamy, tangy finish.
