Grilled Courgette and Aubergine with a Minted Pea & Ricotta Puree:
This main course is perfect for any vegetarian, or as a light healthy option. The grilled courgette and aubergine are marinated with fresh herbs before you grill them adding a beautiful charred flavour that’s balanced with fresh minted pea and ricotta puree, toasted hazelnuts and a sprinkling of salty feta to finish the dish. A perfect balance of spring flavours and textures.

Raspberry Mousse:
This tangy yet creamy mousse has a beautifully light, refreshing texture and is served with crunchy white chocolate and pistachio shards for dunking. This is a luxurious lighter option to finish your evening.
