Our roasted Romanesco with chickpea puree, toasted hazelnuts and cucumber salsa is a must for vegetarians (and meat eaters!) The stunning Romanesco is roasted, enhancing it’s nutty sweeter notes. The warm cucumber salsa cuts through the creamy chickpeas, you’ll top with hazelnuts and a dash of sage oil to add that final crunch and flavour explosion. All of the elements of this dish can be prepared well in advance of your guests arriving which means you’ll be able to sit and enjoy their company as opposed to being stuck in the kitchen.
