Main - Griddled Courgette and Aubergine
This main course is perfect for any vegetarian guest, or as a lighter option. The griddled courgette and aubergine is served with ricotta and pea puree, toasted hazelnuts and sprinkled with feta.
This is a simple but very pretty dish that can be prepped ahead of time meaning it will only take 15 minutes to pull together when your guests are sat round the table.
