Griddled Courgette and Aubergine with a Minted Pea & Ricotta Puree:
This main course is perfect for any vegetarian, or as a light healthy option. The griddled courgette and aubergine are marinated with fresh herbs before you griddle them, adding a beautiful charred flavour that’s balanced with fresh minted pea and ricotta puree, toasted hazelnuts and a sprinkling of salty feta to finish the dish. A perfect balance of spring flavours and textures.
